4 chicken thighs, bone-in
2 tbsp olive oil
1 onion, sliced
3 garlic cloves, minced

1 tsp ground coriander

1/2 cup green olives
1 preserved lemon, sliced
1 cup chicken broth
Fresh cilantro for garnish
Instructions:
Heat olive oil in a tagine or heavy pot. Brown chicken on all sides, then remove.
Sauté onions and garlic until fragrant. Add spices and cook for 1 minute.
Return chicken to the pot. Add olives, preserved lemon, and broth.
